Friday Pilau

2 cups basmati rice, soaked in water for half an hour
1/4 cup extra-virgin olive oil
1 large yellow onion, finely diced
3 Roma tomatoes, chopped
6 garlic cloves, finely chopped
2 tsp kosher salt
1/2 tsp ground black pepper
2 tsp paprika
1 tsp turmeric
3 tbsp tomato paste
3 cups parve chicken stock or water
Wash and drain the rice 3 times. Set aside.
In a large skillet, warm the olive oil over medium heat, and add the onions. Sauté until golden, about 5 to 7 minutes. Add the tomatoes and garlic, then the salt, pepper, paprika and turmeric, and continue to sauté for 3 to 5 minutes.
Add the rice to the onion mixture and stir well to combine. Add the tomato paste and stock and stir well, then bring to a boil.
Continue boiling the rice, stirring occasionally. When all of the water has been cooked into the rice, lower heat. Place a large piece of paper towel over the pot and cover with a tight fitting lid.
Allow to cook for another hour.
Serve Warm
