Kale & Roasted Garbanzo Salad

Dressing
Juice of one lemon
1 teaspoon granulated garlic powder
1 teaspoon honey
3 tablespoons extra-virgin olive oil
Salt and pepper, to taste
Whisk all the ingredients together.
1 14oz can garbanzos
1 10oz bag kale
1 large avocado, diced
3 green onions, finely chopped
1/3 cup pine nuts
Freshly grated Parmesan
Preheat oven to 400°F.
Place garbanzos on a parchment lined baking tray and roast for about 10 minutes, until golden brown.
Put kale, roasted garbanzos, avocado, scallions and pine nuts in a serving bowl.
Pour dressing over the salad.
Garnish with shaved Parmesan.
