Chopped Falafel Salad


1 dozen frozen falafel balls
1 small bunch basil, roughly chopped
1 small bunch mint, roughly chopped
4 green onions, chopped
2 cucumbers, finely diced
2 Roma tomatoes, finely chopped
1 lemon, juiced
3 tbsp olive oil
1/2 tsp salt
Amba Aioli
4 tablespoons amba (pickled mango)
6 tablespoons mayonnaise

Preheat oven to 400°F.
Place falafel balls on a parchment lined baking sheet and heat for 12 to 15 minutes.
Place basil, mint, green onions, cucumber and tomatoes in a salad bowl. Toss with lemon juice, olive oil and salt.
Chop falafel balls into quarters and add to salad.
Dress with amba aioli and serve with pita bread.
