Corn and Cilantro Salad

Dressing
1/4 cup extra virgin olive oil
2 limes, juiced
1/2 tsp sumac
Salt and pepper, to taste
Whisk all the ingredients together. Set aside.
4 ears corn, cooked
1 small purple onion, finely diced
1 small bunch cilantro, chopped
1 avocado, diced
4 Campari tomatoes, diced
Place all the ingredients in a medium bowl and toss with dressing.
Serve with tortilla chips
