Meat burekas

Meat Burekas


2 tablespoons olive oil 
1 large onion, finely chopped
1 pound ground beef
1 beef bouillon 
1/2 cup water 
1/3 cup chopped green olives
1/2 cup chopped cilantro or Italian parsley 
1 large potato, peeled and boiled
Pepper, to taste 
Two sheets puff pastry (or small individual squares)
1 egg, beaten for egg wash
Everything But the Bagel seasoning or sesame seeds

In a pan, warm olive oil over medium heat, add onion and sauté until soft and golden. 
Add ground beef and using a wooden spatula chop the meat into smaller pieces. Sauté until all the meat is browned. 
Add one beef bouillon cube, pepper, olives, cilantro and water. Cover and simmer for 15 minutes Add mashed potato and combine thoroughly. 
Allow mixture to cool and drain any excess liquid. 
Preheat oven to 425°F. 
Roll out puff pastry sheet, place long mound of mixture in center and create a roll. 
Brush with egg wash, sprinkle with seeds, then seal edges with a fork. 
Bake about 20 to 30 minutes until the pastry has puffed and is golden.
