Smoky Cauliflower Bites



1 head of cauliflower, chopped into florets

1/3 cup extra virgin olive oil

4 large garlic cloves, finely minced

1 tablespoon sweet paprika

1 teaspoon turmeric

1 teaspoon kosher salt

1/2 teaspoon pepper

Preheat oven to 425°F.

Place florets in a large bowl and cover with boiling water, then set aside for 5 minutes.

In a small bowl, combine the oil, garlic, paprika, turmeric, salt and pepper.

Drain the water from the cauliflower. Pour the garlic and paprika aïoli over the cauliflower and toss to coat evenly. Sprinkle a dash of paprika on top for extra color.

Place the cauliflower florets in a single layer on a parchment lined baking sheet.

Bake for 30 to 40 minutes, until fork tender, and slightly browned.

Serve hot.

Zucchini Bites

4 large zucchini, cut into thin strips

Garlic and paprika aïoli

Preheat oven to 425°F.

In a large bowl, toss the zucchini with the aïoli. Place zucchini on a parchment lined baking sheet. Bake for 20 minutes or until fork tender.
