Blood Orange & Fennel Chicken Recipe


1 chicken, cut in pieces

1 blood orange, cut into wedges

1 orange, cut into wedges

1 fennel bulb, cut in thin wedges

1 purple onion

1 yellow onion

1/2 cup extra virgin olive oil

2 teaspoons turmeric

2 teaspoons garlic powder

1 teaspoon Old Bay Seasoning

Salt & pepper to taste

Preheat oven to 400.

Arrange chicken pieces in ovenproof baking dish.

Arrange orange pieces, fennel and onion around the chicken.

Pour oil over the ingredients.

Sprinkle spices and seasonings over the chicken.

Bake for 45 minutes.

Baste chicken with juices.

Lower oven to 300 and bake for 1 to 2 hours.
