2 packages frozen baby okra
1/4 cup olive oil
1 garlic clove, finely diced
1 15oz can diced tomatoes
2 tablespoons tomato paste
1 lemon, juiced
1/2 cup water
Warm olive oil over medium heat, then add the garlic, diced tomatoes, tomato paste, lemon juice, salt and water.
Stir the ingredients and bring to a boil.
Reduce heat and cover pot. Allow sauce simmer for 15 minutes.
Add the okra to the tomato sauce and simmer on low for another 15 minutes.
Preheat oven to 350°F.
Place in an oven safe dish, cover with a lid or foil and bake for 30 minutes.
Remove from oven(if sauce looks dry, add another 1/2 cup water.)
Uncover and bake for another 10 minutes.
