Sutlach: Sephardic rice pudding


6-7 tablespoons of rice flour
1qt whole milk (I use 2% sometimes)
3-4 tablespoons of sugar
2 tsp vanilla
Lemon rind of one lemon
Bring to a boil and simmer while stirring until thickened.

Approx for 15 min
If still soupy add a teaspoon full of rice flour and keep stirring you may need to keep adding but really 7 tablespoons should do it. Especially with whole milk. Make sure to stir until very creamy. Put in large bowl or individual ramekins. When really well chilled add Cinamon on top. And enjoy.
