Caramel Apple Cheesecake

Bourbon Sauce
4 ounces unsalted butter
1 cup brown sugar
1/2 cup heavy cream
2 teaspoons bourbon
1 teaspoon vanilla extract
1/2 teaspoon salt

In medium pot, melt butter over medium heat until foamy.
Add brown sugar, stir well and cook for 3-5 minutes.
Stir in cream, bourbon, vanilla and salt, then continue stirring.
After mixture has bubbled and tripled in size, remove from heat.
Set aside to cool.

Bourbon caramel sauce
2 small Granny Smith apples, cut into 8 wedges
2 tbsp salted butter
1 tbsp white sugar
1/2 cup roasted, salted peanuts, crushed

In a saucepan, melt butter over medium heat. Add the apples and sauté for two minutes. add the sugar and allow apples to brown for a few more minutes.
Set aside to cool.
Pour cooled sauce over cheesecake and garnish with peanuts.
Arrange apples around the edges of the cheesecake!
