Instant pot Beef Soup

Instant Pot Beef Soup 

1/4 cup extra virgin olive oil
1 large onion, diced
2 lbs ox tail meat with bone (or cheek meat or stew meat)
baby gold potatoes, unpeeled and quartered
2 carrots, peeled and chopped 
2 celery stalks, chopped
1 large turnip, finely diced
4 garlic cloves, finely chopped
1 15oz can diced tomatoes 
1 15 oz can garbanzo beans
3 bay leaf
3 cubes beef consommé 
1 tablespoon salt
1 teaspoon ground black pepper
1 teaspoon cumin
3 cups water 

This recipe works in an instant pot, pressure cooker, crock pot or on the stove top. 
Set instant pot on sauté setting, then add oil and onion. 
Sauté until onion is slightly golden. 
Add meat, vegetables, spices and water. 
Set on pressure cooker setting to 1 hour. 
If cooking in a pot or crockpot, slow simmer until meat is tender.
