Citrus Arugula Salad


Red wine vinaigrette dressing

1/3 cup extra-virgin olive oil

2 tbsp red wine vinegar.

1 tsp sumac

1/2 tsp kosher salt

1/4 tsp black pepper

2 tsp honey

Whisk all the ingredients in a bowl or jar. Set aside until ready to serve the salad.

8 oz mixed baby greens

8 oz arugula

1 cup shaved heirloom carrots.

2 oranges, peeled and cut into thin segments

1 large avocado, diced

1 cup pomegranate arils

1/2 cup roasted sliced almonds

Arrange the greens, oranges, avocado, pomegranate and almonds in a large bowl. Immediately before serving, pour the dressing over the salad and toss.
