3 tablespoons avocado or canola oil
1 whole chicken, cut into pieces
1 large onion, diced
2 large tomatoes, diced
3 potatoes, large dice
2 teaspoons kosher salt
2 teaspoons curry powder
1 teaspoon ginger powder
1 teaspoon garlic powder
1 teaspoon turmeric
1 teaspoon paprika
1 teaspoon chili powder, if desired
1 small canned jalapeño peppers
2 cups tomato sauce
3 cups water
In a large pot, warm oil over medium heat and add chicken pieces. Then brown for five minutes.
Add onions and sauté for three minutes.
Add tomatoes, potatoes and all the spices. Stir well and sauté for 2 minutes.
Add jalapeño peppers, tomato sauce and water and bring to a boil.
Cover pot, reduce heat and simmer for one hour.
Serve over turmeric spiced basmati rice or plain white rice.
