Extra Easy Matbucha Recipe

1/4 cup extra virgin olive oil

4 large garlic cloves, peeled and chopped

1 28 oz can crushed tomatoes or tomato puree

1 small Trader Joe’s can fire-roasted green

peppers or jalapeños, diced 1 tsp red chili flakes

1 tsp kosher salt

1 tsp sweet paprika

Warm the oil in a heavy pot over low heat, then add the chopped garlic and sauté for 2-3 minutes.

Add the crushed tomatoes to the pot and bring them to a simmer over medium low heat. When the mixture begins to bubble, cover the pot and reduce heat to low. Stir the mixture every 10 minutes.

After 30 minutes, add the roasted green peppers, salt, paprika and chili flakes. Continue to simmer for another 30 minutes, stirring every 10 minutes.

Serve warm or at room temperature.

Note: Leftovers can be stored in a tightly sealed container.
