Sponge Cake Recipe


5 eggs (yolks)
7 eggs white
2 1/4 cups of flour
1 1/2 cup of sugar
3/4 cup of orange juice or water 
1 tablespoon orange or lemon zest 
1/2 cup oil
3 tablespoons baking powder
1 teaspoon of vanilla extract
1/4 teaspoon of cream of tartar


Directions-


Beat the eggs white with half sugar and cream of tartar. Until stiff 
In a separate bowl beat egg yolks oil rest of sugarvanilla and juice or water. I like to add the rinde of one orange or lemon. Beat all together till a beautiful yellow color. Then add dry ingredients til well blended. Now fold the stiff egg whites into your yolk mixture. Grease the bottom and sides of tube pan. DO NOT grease the middle tube. Pour batter in and bake until toothpick comes out clean. Take out cake from oven and invert upside down onto a cooling rack. Leave it until it is completely cold. Do not touch it. Then slowing remove pan. You should have a nice tall sponge. 

Bake 40 min at 325 then 10 min at 350
