4 cups golden delicious apples cubed(approx.4 medium apples)
2 cups sugar
2/3 cup oil
2 large eggs
1 teaspoon cinnamon
2 teaspoon vanilla
2 teaspoons baking soda
2 cups flour
2 cups chopped walnuts
Preheat oven at 350F
Peel and cut apples into medium cubes, toss with sugar in a bowl and let stand for 30 minutes.
Using a whisk beat eggs, oil and vanilla until well combined.

In a separate bowl combine flour, cinnamon, baking soda and walnuts.

Combine the egg mixture into the flour mixture. (it will be a very thick doughy mixture)

Stir in the apples.

Pour the mixture into a well-greased oven dish or Pyrex and bake for 50-60 minutes until the top is browned.

Serve into bowls like you would serve a crumble. This cake can be made up to 3 days ahead , well wrapped in the refrigerator. When ready to serve, bring to room temperature or warm in oven at 350F for 20 minutes. Serve with whip cream or non dairy ice cream.
