SEVILLE ORANGE CHICKEN
Juice of 1 orange
1/2 cup Seville orange marmalade
1/4 cup Dijon mustard
1/4 cup soy sauce
1 tablespoon sweet paprika
1/2 teaspoon ground cardamom
1/2 teaspoon ground ginger
1/2 teaspoon ground black pepper
1 whole chicken, cut into 8 pieces
Orange slices for garnish
Preheat oven to 375.
In large bowl, combine first eight ingredients and mix well.
Arrange chicken pieces, skin-side up in a baking dish.
Pour sauce to coat chicken and let sit 30 minutes.
Bake 1 hour.
Lower heat to 300 degrees and bake additional 45 minutes.
