Whipped Feta And Tomato Garlic Confit

1 cup extra virgin olive oil

12 garlic cloves, peeled

10oz cherry tomatoes

Preheat oven to 350°F.

Place oil, garlic and tomatoes in an ovenproof dish and bake for 20 minutes.

Set aside.

8oz Feta Cheese

1/2 cup plain Greek yogurt

Lemon zest

2 tbsp garlic confit

Freshly ground black pepper

Place Feta, yogurt, zest and pepper in a blender.

Pulse for 2 minutes and spoon onto a plate.

Top with confit.

Toasted walnuts and your favorite herbs

Serve with pita chips.
