Moroccan Fava Bean Salad

Recipe

peel open pods and remove beans,

boil in salted water for an hour or until fork tender.

In a pan , two tablespoons of olive oil

1 tsp cumin

1 tsp hot paprika or harissa ,

half preserved lemon finely chopped and a handful of cilantro finely chopped.

Sauté and add the Fava beans and coat well with spice mixture. Cool and serve at room temp. These beans are not peeled but if you don’t like the skin, you can peel after boiling. 🍋🌶
