2 pounds ground beef
1 large onion, finely chopped
4 tablespoons extra virgin olive oil, divided
1 cup farfel, soaked in warm water and squeezed dry
1 tablespoon salt
1 teaspoon pepper
1/3 cup chopped Italian parsley
Preheat oven to 350°F.
Grease an ovenproof baking dish and set aside.
Warm 2 tablespoons of olive oil in a skillet over medium heat and add onion. Sauté until golden brown. Allow to cool.
Warm 2 tablespoons of olive oil in a skillet over medium heat and add the beef. Use a wooden spoon to break the meat into pieces, until the beef is fully cooked. Allow to cool.
In a large bowl, whisk 8 of the eggs. Then add the salt, pepper and farfel.
Add onions and beef to egg mixture and combine well.
Pour mixture into baking dish.
In a small bowl, whisk the remaining eggs, then spread over the top of the meat.
Bake for about 30 minutes and remove from the oven when the top of the Quajado is golden brown
